Ingredients
1 kg of fresh mussels
Vinaigrette Ingredients
1 tablespoon finely chopped white or red onion
1 teaspoon of finely chopped garlic
1 teaspoon of green pepper
1 tablespoon finely chopped seedless tomatoes
1 teaspoon finely chopped parsley
1 teaspoon finely chopped green onion
1 teaspoon finely chopped basil
3 tablespoons of olive oil
2 tablespoons of alcohol vinegar
1 teaspoon of salt
1 teaspoon of black pepper or 1 teaspoon of finely chopped seedless pepper
Place the mussels in a pan over high heat with 1/2 cup of water. While mussels cook, mix remaining ingredients. When the shells open, remove from the heat and serve with the vinaigrette.
